Sweet Tooth Saturday: Gluten Free Apple Cookies

I am still working on using up a massive amount of apples that was given to me by a patient. Ive been making every apple thing I can think of. The husband requested some apple cookies so this is what I came up with. If you like a flat crispy on the outside, gooey/chewy on the inside, then this isn’t your kind of cookie. The apple chunks keep it moist so this is a very soft cookie. That being said, they are darn good and I ate way too many of them.

Ingredients:

2 Cups Gluten Free Flour

1/2 Cup Oats

1/4 Cup Quinoa Flakes

1 tsp Cinnamon

1 tsp Baking Soda

1/2 tsp Baking Powder

2 Eggs

3/4 Cup Butter (room temperature)

1/4 Cup Almond Butter

1 tsp Vanilla

3/4 Cup Coconut Sugar

1/2 Cup Chopped Walnuts

2 Small Apples Chopped


Directions:

Preheat oven to 350º Degrees. Mix all the dry ingredients into a medium size bowl.

Start beating butter with a standing mixer until creamy.

Add Sugar and beat until well combined. Add Almond Butter. Beat in Egg one at a time then add Vanilla.

Put mixer on medium to slow and slowly add the contents of the dry ingredient bowl. Mix until well combined.

Fold in the apples and walnuts.

Form into balls and press to flatten.

Bake for about 15 minutes or until golden brown. If you like a crunchier cookies, leave them in longer, otherwise they will be a soft cookie.
